1 kg Nicola Potatoes, washed unpeeled

duck fat

Method:
Place potatoes in a pot of salted water, bring to the boil, then lower the heat &
simmer, uncovered for 2 minutes
Turn off heat, cover the pot & leave for 2 hours until they are cool enough to
handle
When ready to cook, preheat the oven to 200C lightly spread duck fat on a
baking tray..
Drain the potatoes thoroughly & cut them into chunky chips
Scatter on tray & drizzle with more duck fat.
Roast potatoes for 15 minutes
Or until golden brown & crunchy
For something extra indulgent, add 1 tbsp butter to the baked chips and fry with
chopped parsley.
Season liberally
