Duck and Green Papaya Salad


Duck Marinade

1/4 cup light soy

1 tbsp ginger, grated

1/4 cup mirin

2 tbsp coriander, finely chopped

juice of 1 lime


2 fresh duck breasts, skin on



1 tbsp coconut palm sugar

2 tbsp mirin

2 tbsp rice wine

1 tbsp soy sauce

1/4 cup extra virgin olive oil



1 carrot, julienned

1 handful tender green beans, sliced into rounds

1 cucumber, diced

1 bunch coriander, finely chopped

1 green papaya, diced

1 bunch chives, sliced into batons

2 finely chopped bird’s eye chillies

1 tbls toasted sesame seeds

1 handful peanuts, finely chopped


Duck Marinade
In a hot frying pan, cook the duck breasts. Allow them to cool and then leave to marinade for a couple of hours

Whisk together the ingredients in a bowl 

Toss together the salad ingredients in a bowl with the dressing. Serve with the sliced duck breast
