Dream Cake


115g unsalted butter

¾ cup caster sugar
3 eggs
½ vanilla bean, split seeds scraped
1 ¼ cups self raising flour
½ teaspoon baking powder
¼ cup milk
crème fraiche, ice cream or double cream to serve

150g unsalted butter, chopped
250g brown sugar
100g desiccated coconut
¼ cup milk


Preheat oven to 180C. Beat sugar, eggs and vanilla food processor until thick and pale. Add vanilla seeds and beat for 2 more minutes. In a small saucepan, add butter and milk and melt on a low heat.

Sift flour and baking powder together. Fold flour and butter mixtures through egg mixture and pour batter into greased deep slice pan. Bake for 20 minutes or until skewer comes out clean and allow to cool.

In a saucepan over a medium heat butter, brown sugar and milk, and stir until sugar dissolves. Bring to the boil and add coconut. Simmer for 1 minute or until thickened. Remove from heat. Evenly spoon coconut topping over the cake mixture.
