Doughnuts

Ingredients

To start the yeast

2 tbls dried yeast

1 tbls plain flour

1 tbls sugar

¼ cup warm water

 

Dough

3 cups plain flour

2 whole eggs

3 egg yolks

¼ cup raw sugar

500mls warm milk

1 tsp cinnamon

 

Fillings

Jam spiked with brandy

Custard

Chocolate sauce

Vanilla ice cream




Method

Dough

Combine all to a thick wet dough by hand

Prove for 1 hour in a warm place

Knock back

Prove again for 30 min

Roll into 30 g balls

Fry in oil at 170 C until golden brown

Drain on a wire rack for 3 to 4 minutes

Roll in caster sugar and cinnamon

 

Yield 50 serves at 30 g
