Dairy Free Pizza Pie

Ingredients

6 large prawns
olive oil, as needed
20-30 slices good quality salami
½ packet fillo pastry
350ml passata
½ bunch basil, finely chopped
1 clove garlic, grated
pitted olives
¼ red onion finely sliced

Method

Preheat oven to 200C.

Brush the fillo on both sides with oil and then lay the fillo gently into a large pan. Repeat until there are 12 layers to form a base.

Layer with salami, then a sheet of oiled fillo and repeat twice.

Mix the passata, basil and garlic, and place some on the fillo.

Layer the prawns, season and top with the passata. Put a piece of salami on each prawn, sprinkle the olives and red onion over the top, and a drizzle of olive oil.

Bake at 200C for 12-15min.
