Dairy Free Pea Soup


1 large carrot, peeled, sliced

1 large onion, peeled sliced

2 sticks of celery

2 cup split peas

handful of mint sprigs

1 garlic, crushed

2 litres of vegetable stock, gluten free and low sodium

soy yoghurt


Place all ingredients in saucepan. Bring to boil, lower heat and simmer gently until tender and thick Рabout 1 hour. Puree soup with stick blender, adding more water if a thinner soup is required. Serve with a spoonful of soy yoghurt.
