Dairy-Free Endive Boats with Pistachio Pesto

Ingredients

Endive
100g raw pistachios
½ bunch spinach
8 basil leaves
3 mint leaves
30g 
nutritional yeast
1 garlic clove
⅓ cup extra virgin olive oil

Salad, combined
1 x punnet perino tomatoes, quartered
Watercress, chopped
Lime juice

Method

Put all ingredients, except endive, in a food processor. Blend until creamy and serve inside endive leaves with salad.
