Cucumber and Pork Stir Fry with Egg

Ingredients

200g pork mince
1 tbsp ginger, grated
1 clove garlic, grated
½ cup crispy bacon and bacon fat (optional)
½ red onion, finely diced
1 red chilli, finely chopped
salt and pepper
5 eggs, beaten
1 tbsp mirin
1 tbsp soy sauce
2 tbsp olive oil
1 cucumber sliced into long strips
¼ cup spring onion
½ cup bean shoots
¼ cup coriander
kewpie mayonnaise
1 tbsp sesame seeds, toasted

Method

Sweat off the pork mince with oil or bacon fat, ginger and garlic. And the onion, chilli and salt and pepper and stir until cooked.

In a bowl whisk eggs, soy and mirin. In a hot nonstick pan with olive oil, pour in the mixture and start cooking the omelette. When the omelette is almost cooked, on one side of the omelette place the cooked mince, cucumber, bean shoots and spring onion. Then fold the other side to cover.

Top with sesame seeds, coriander and mayonnaise.
