Crispy Firecracker Tofu

Serves 4-6
Time 30 minutes


2 tbsp hot sauce
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 garlic clove, microplaned
2 tbsp brown sugar
Salt & pepper
½ tsp chilli flakes
¼ cup water
1 block extra firm tofu (dry with kitchen towel), cut into cubes
cup cornstarch
2 tbsp extra virgin olive oil
1/2 tsp pepper

3-4 tbsp extra virgin olive oil for shallow frying

To serve
Mini cos lettuce cups
½ bunch coriander, roughly chopped
⅓ cup peanuts
1 lime, juice  


Preheat the oven to 180°C.
In a large bowl mix all ingredients apart from tofu and cornstarch. Set aside.
Place the corn starch on a plate and coat the tofu, dusting off any excess. Repeat until all tofu is covered.
On a non-stick large frying pan heat tofu pieces for 2-3 minutes on all sides.
Pour the firecracker sauce over the tofu and bake for 10-15 minutes or until crispy. Toss the tofu half way through cooking time to ensure everything is cooked evenly.
Serve in lettuce cups.
