1-2 tbsp coconut sugar
1 cup sago
3 cups coconut milk
Pinch ginger, ground
½ cup fresh passionfruit pulp
1 cup fresh pineapple, diced finely
1-2 tsp lime zest
Place sago, coconut milk, coconut sugar and ginger in a medium saucepan over medium heat.
Bring to the boil and simmer for 12-15 minutes until sago is translucent and soft.
Spoon into serving dishes and place in the fridge to cool.
When cooled, top with pineapple, passionfruit, lime zest and coconut.
