Coconut Pancakes

Ingredients

1½ cup self raising flour, sifted
1 tsp. baking powder, sifted
1½ cup desiccated coconut
⅓ cup brown sugar
1 x 270ml can condensed milk
1 large egg
1 x 270g can coconut cream
butter, for cooking

 

To serve
1 banana, chopped into rounds
½ lime, juiced
fresh mint, chopped
1 tbsp. brown sugar

 

ice-cream
½ cup desiccated coconut, toasted
maple syrup
icing sugar

Method

Mix the sifted self raising flour and baking powder together in a bowl. Then mix the brown sugar, condensed milk, desiccated coconut, egg and coconut cream. Cook the pancakes in batches, in a hot crepe pan with butter.


Serve with bananas mixed with sugar, mint, brown sugar and lime juice, and ice-cream, maple syrup, toasted desiccated coconut and dusted with icing sugar.
