1 cup extra virgin coconut oil
1 cup cacao powder, sifted
2-3 tbsp honey or pure maple syrup
1 tsp pure vanilla bean extract
Pinch cinnamon, ground (optional)
Pinch ginger, ground (optional)
⅓ cup goji berries or chopped cranberries
⅓ cup flaked almonds, toasted
⅓ cup sunflower seeds, toasted
Line a baking tray with baking paper.
In a medium saucepan over low heat, melt the coconut oil.
Remove from heat and add cacao, honey, cinnamon, ginger, vanilla and salt, combine well.
Spread coconut mix on baking tray until smooth, sprinkle toppings of choice over the chocolate mix.
Place baking tray in the freezer for 45min – 1 hour until solid
Once solid, remove from freezer and break into pieces, store in the fridge
