Cinnamon Ice Cream Nachos

Serves 4
Time 15 minutes


2 tbsp brown sugar
2 tsp ground cinnamon
4 flour tortillas (6 inch)
2 tbsp butter, melted

Simple Chocolate sauce
150ml cream
500g chocolate

Ice Cream Sundae
1 cup vanilla ice cream
Whipped cream, to serve
¼ cup walnuts nuts, roughly chopped
1 glace cherry
1 handful of hundreds & thousands
Sprig of mint
Icing sugar


Preheat oven to 180°C and line a baking tray with baking paper.

Lightly brush each tortilla on both sides with melted butter before cutting into quarters, then dust with cinnamon and brown sugar. Place on the baking tray and bake for 8-10 minutes until lightly golden, turning after 5 minutes, then let cool to crisp up.

To make the chocolate sauce, bring the cream to the boil, remove from the heat and stir in chocolate until melted.

Scoop vanilla ice cream into a bowl or parfait glass, add whipped cream, sprinkle over walnuts, glace cherry, hundreds & thousands, then pour over the warm chocolate sauce. Garnish with a mint sprig, icing sugar, and arrange the tortillas on top.
