Chocolate Zucchini Muffins

1½ cups grated zucchini – fluid thoroughly squeezed out – this is CRITICAL!

1 ripe banana, mashed

½ cup honey

1½ cups plain flour 

½ cup cocoa powder (unsweetened)

½ tsp baking soda

1 tsp baking powder

½ cup Grove avocado oil 

½ cup milk

2 free-range eggs

½ cup chocolate chips

½ cup chopped walnuts


Preheat the oven to 180°C. 

Brush muffin tray with avocado oil. 

In a bowl mix together flour, cocoa, baking powder, and baking soda. 

In a separate bowl whisk the eggs, milk, honey, and avocado oil together until all mixed together. 

Stir the grated zucchini and mashed banana into the egg mixture. 

Add the dry ingredients to the other bowl and stir until combined. 

Finally, fold through the walnuts and chocolate chips at the end. 

Place into the muffin trays and bake for 20-25 minutes until the toothpick placed inside comes out clean. 

Allow to cool on a rack and enjoy!
