Chocolate Pudding


5 egg yolks

5 whole eggs

250g dark chocolate

125g brown sugar

100g plain flour

50g almond meal

275g unsalted butter

zest from 2 oranges

ice cream, to serve


Chocolate Sauce

100ml cream

300g dark chocolate


Preheat oven to 200℃.

Whisk eggs and sugar until ribbon consistency. Melt butter and chocolate over double boiler. Add butter, chocolate, flour and orange zests to egg mix.

Pour into lined muffin tins or baking dish. Bake for 12 – 15 minutes if puddings are small and 20 – 25 minutes if larger.

For the chocolate sauce, heat the milk in a small pot. Take off heat, pour in chocolate and mix until combined. Pour over pudding and serve with ice cream.
