Chocolate Cookie Dough Cheesecake

Serves 10-12
Time 30 minutes + setting time


Cookie Dough Base

2 cups almond flour

200g butter softened

100g cream cheese softened

½ cup sugar

1 tbsp molasses 

2 tsp vanilla paste

½ cup chocolate chips



250g cream cheese

1 cup cottage cheese

½ cup caster sugar

200ml cup sour cream

½ tsp vanilla



1 cup chocolate chips

100ml thickened cream

⅓ cup sugar


To serve

1 stem mint

Fresh berries 

Double cream 

Icing sugar


Line a round springform pan with baking paper. 

Blitz all of the ingredients for the cookie dough base in a food processor until combined. Pour into the tray and use a spatula to spread out. 

Add all of the ingredients for the cheesecake to a food processor and blitz until it forms a smooth mixture. Pour over the cookie dough base. 

Heat the cream and sugar in a saucepan over low heat until the cream comes to a boil. Remove from the heat and stir through the chocolate until it’s melted and combined. Set aside to cool.

Pour the cooled ganache over the cheesecake and set it in the fridge overnight.
