½ cup white sugar
1 ½ cups brown sugar, packed
½ cup unsalted butter, melted
½ tsp baking powder
1¼ cups biscuit, pastry and cake flour
1 tsp vanilla extract
100g milk chocolate chips
100g dark chocolate chips
Preheat the oven to 180°C.
In a large bowl mix the sugars and egg with a wooden spoon until creamy. Add butter, baking powder, flour and vanilla and stir until combined. Fold through chocolate chips.
Put the biscuit dough onto a sheet of baking paper and roll into a log shape. Twist the ends of the baking paper to secure and chill in the fridge for 30 minutes.
Use a serrated knife to slice biscuits and place them on a lined baking tray.
Bake for 12-15 minutes. Allow to cool slightly on the tray before serving.
