Ingredients
3 garlic cloves, smashed
1 long red chilli, chopped roughly
1 long green chilli, chopped roughly
½ red onion, roughly chopped
1 tin pinto beans, smashed
1 jalapeno
olive oil
salt
1 cup mozzarella, grated
½ cup cheddar cheese, grated
chipotle preserved chillies, chopped
¼ cup coriander, chopped
3 spring onions, chopped
Method
In a hot pan, add olive oil, garlic, onion, red and green chilli, jalapeno and salt.
Add chipotle chillies.
Add pInto beans and stir.
Reduce heat to medium low, add cheddar, and cook, stirring constantly, until cheese melts, about 5 minutes. Stir in coriander and spring onions.
Serve immediately with tortilla chips.
