Chickpea Base Pizza

Serves 2-4
Time 25 minutes + dough resting time


2 cups chickpea flour
½ cup water
1 tsp salt, good quality
2 tsp dried oregano
2 tsp cumin powder
1 tbsp extra virgin olive oil
1 garlic clove, finely crushed

1 cup hummus
500g pumpkin, cut into fine cubes
150g feta cheese, crumbled
1 red onion, finely sliced
100g baby rocket leaves
¼ cup walnuts, chopped finely


In a large bowl, mix together all of the dough ingredients. Knead it into a ball, with a little extra flour, if needed. Place it back into the bowl and cover with plastic and let it rest for 2 hours, if needed.
Roll the dough flat and place the pizza on an oiled pizza stone or baking tray.

Preheat oven to 180°C.

Spread the pizza base with hummus, top with pumpkin, onion, walnuts and cheese. Cook in the oven at 180°C for 15-20 minutes until the base is crisp and pumpkin is tender. Once out of the oven, top with rocket leaves and let wilt.
