250g dried protein pasta
2 tbsp extra virgin olive oil
1 tbsp butter
2 garlic cloves, diced
250g chicken sausages, skin removed
2 rashes bacon, diced
1 bunch broccolini, chopped finely
¼ cup flat-leaf parsley, chopped
1 cup chicken stock
½ cup sour cream
½ cup grated pecorino
Cook pasta as per packet directions.
Heat oil in a pan on medium heat. Add sausage meat and bacon and cook for 4 minutes. Add garlic and cook for 1 minute.
Next, add the chicken stock and broccolini. Bring to the boil and cook for 4 minutes. Add butter, cheese, sour cream and parsley to the pan. Mix.
Strain pasta and add to the pan. Reduce heat to low and cook for 2 minutes.
Finally, season to taste, top with a little extra pecorino to serve.
