Chicken Kiev with Minted Peas


2 chicken breast  

160g softened unsalted butter

2 clove garlic, crushed

1/3 cup chopped parsley

2 tsp salt

½ tsp black pepper



100g flour

2 eggs

100 ml milk

400g fresh breadcrumbs


Minted peas

½ onion, finely diced

2 cloves garlic minced

½ cup olive oil

¼ cup mint torn

2 tbsp rosemary chopped

200g fresh peas blanched

salt & pepper

1 cup water



In a bow mix butter, garlic, and parsley. Roll up mixture in cling wrap and put in freezer for 10 min.

Cut a small insertion in chicken breasts. When garlic butter is cool, insert inside chicken. Coat chicken with flour. In a separate bowl coat with eggs and soy milk. In additional separate bowl, coat with fresh breadcrumbs. Cook in pan with oil until golden brown. Put in oven for 8 – 12 min.

Minted peas

In a pot, cook peas, onion, mint, water and garlic.
