Chicken Cordon Bleu



2 eggs
2 tablespoons milk
salt and fresh black pepper
½ cup fresh bread crumbs
½ cup panko crumbs
½ cup all-purpose flour
2 chicken cutlets, butterflied open
4 slices deli ham
4 slices deli Swiss cheese
olive oil
sesame seeds
lemon, cut into wedges
serve with buttered peas (optional)



Whisk the egg and milk together in a shallow dish,season with salt and pepper.
In a second wide, shallow dish combine both bread crumbs and sesame seeds.
Season the chicken cutlets lightly on each side with salt and pepper.
Place two slices each of cheese and ham (trim to fit the cutlet, if needed) and choped chives inside the chicken and season with salt and pepper.
Secure with a toothpick.
Coat with flour, then egg wash, then breadcumbs, then back into egg wash and back into breadcrumbs, using your hands to pat the crumbs on.
On a medium heat, add olive oil to shallow fry the chicken until golden brown on both sides, until cooked through . Or, once golden you can place into the oven for 10 minutes, until chicken is cooked through.
Serve with buttered peas and a lemon wedge.
