Chewy Cashew Chocolate Chip Cookies

Time 30 minutes


½ cup butter, soft
¾ cup brown sugar
½ cup caster sugar
1 egg
1 tsp vanilla essence
1 ⅓ cup plain flour, sifted 
½ tsp baking soda
1 cup chocolate (mixture of milk and dark), chopped
⅓ cup cashews, chopped


Line a tray with baking paper. Preheat the oven to 175°C, fan-forced.

Use a wooden spoon to cream butter and sugars together until light and smooth.

Add the egg and stir to combine. Add flour and baking soda through a sieve and stir through with vanilla essence, cashews and chocolate. Portion the cookies into golf ball sizes, place them on the baking tray with enough space for them to spread.

Bake for 10-12 minutes or until golden brown.

Allow to cool for a few minutes on the tray before serving.
