Cheesy Quesadilla with Avo Lime Salsa

Serves 2
Time 30 minutes


1 tbsp extra virgin olive oil

1 jalapeno, diced

1 cup black beans, rinsed

½ cup corn 

½ red capsicum, diced

1 tsp cumin

½ tsp chilli powder

4 medium flour tortillas

1 cup cheddar cheese


Avo Lime Salsa 

1 pot sour cream

1 avocado, sliced

1 lime, juiced

1 bunch fresh coriander, ripped

2 limes, halved


In a large pan sauté jalapeno, black beans, corn and capsicum. 

Add cumin and chilli powder.

In another large pan place the tortilla down. 

Add filling to one half of the tortilla and sprinkle with cheese.

Fold the tortilla in half using a spatula and cook both sides. 

In a bowl mash sour cream, avocado, lime juice, coriander, salt and pepper. Place a dollop on the quesadilla.

On a grill pan place limes until marked with griddle lines. Serve with quesadilla.

Sprinkle with fresh coriander.
