Ingredients
Sauce
3 cloves garlic, crushed
½ red onion, finely diced
5 – 6 basil leaves
250g bacon, cubed
1 carrot, 1 cm dice
1 celery, 1 cm dice
1 green chilli, deseeded, finely sliced
½ red pepper, diced
1 bay leaf
½ cup tomato passata
½ cup chicken stock
large knob of butter
salt and pepper
Meatballs
400g pork or beef mince
½ cup fresh breadcrumbs
½ red onion, finely diced
½ bunch parsley, chopped
½ clove garlic, grated
2 tbsp. worcestershire sauce
1 tsp. tabasco sauce
5 balls of bocconcini
salt and pepper
Method
Drizzle olive oil into a heated pan. Add onion, bacon, bay leaf, capsicum and chilli. Add butter. Season with salt and pepper. Add tomato passata and stock, then simmer.
In a large bowl combine mince, herbs, tabasco, breadcrumbs and worcestershire sauce. Using your hands mix ingredients together. Make a palm sized ball in your hand, and using your thumb create a dimple. Place cheese in the centre and cover. Place balls in a baking dish and cover with sauce.
Cook in the oven at 185C for 20 – 25 minutes or until golden brown. Serve.
