2 cups self raising flour
1 tsp. baking powder
2 tbsp. caster sugar
½ cup buttermilk
½ cup oil
¼ cup cream
¼ cup chives
1 cup cheese, grated
4 rasher bacon, diced
½ brown onion, diced
Heat 1 tablespoon of olive oil in a pan over a medium flame.
Sauté bacon and onion for 5 minutes or until bacon is crisp. Set aside.
In a large mixing bowl, sift flour, baking powder and sugar.
Make a well in the center and mix in buttermilk, cream, eggs and oil.
Season with a pinch of salt and pepper.
Stir through sautéed bacon, cheese and chives. Mix until all ingredients are combined.
Spoon mixture into a greased mini muffin tray.
Transfer to a preheated 200C oven for 10 – 15 minutes or until golden brown.
