250g cheddar cheese, grated
2 slices bacon
2 tablespoons butter
1 tablespoon diced onion
2 cloves garlic, crushed
4 potatoes, peeled and sliced
½ cup spring onions and parsley chopped
salt and pepper to taste
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble.
Heat bacon oil over medium heat and stir in butter. Add onion, garlic and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
Sprinkle with salt, pepper, spring onions, parsley, cheese and bacon. Continue cooking until cheese is melted.
