Cheese and Honey Fritters

Serves 12-15
Time 30 minutes + resting time


Dough Ingredients
400g plain flour
4 whole eggs
3 yolks
pinch salt
1 tbsp butter, melted
flour for dusting
yolk to seal fritter

Filling Ingredients
1 cup mozzarella, grated
1 cup pecorino, grated
1 tbsp thyme, chopped
1 tbsp rosemary, chopped
½ tsp pepper

Honey Syrup
1 cup honey
1 orange, zested


Sift 400g flour onto the board and make a well. Crack the eggs, salt and melted butter into the well and mix it around slowly while gently incorporating the flour. Knead it together to form the dough and rest for 30 minutes.

In a separate bowl, mix all of the filling together.

Halve the dough and roll it out evenly with a little extra flour until flattened to approx 2mm thick. Using a disc, cut large round shapes out of the dough, brush it with egg yolk on one half, place the filling in the middle and seal the edges where the yolk is. Repeat.

Heat the oil in a large pan to 170-200ºC. Fry about 3 fritters at a time until golden on both sides, ladling the hot oil over them as they fry. Remove them with a slotted spoon onto a plate covered with kitchen paper.

In other large pan, heat the honey and the orange zest. Pour the syrup over the fritters and serve warm.
