120g plain flour
80g butter, cold and cubed
80g grated sharp cheddar cheese
1 egg – yolk and whites used separately
2 tbsp caraway seeds
Preheat the oven to 180°C fan-forced.
Sift the flour into a bowl and sprinkle the salt over it. Crumble the butter and flour together with your fingers. Add the egg yolk and grated cheese. Alternatively, you can blitz the flour, butter, a pinch of salt and egg yolk until it comes together. Add grated cheese and pulse a few times to incorporate.
Roll a heaped tablespoon of dough and place on a tray lined with baking paper. Press gently with your hands to flatten slightly.
Glaze the biscuits with egg white and sprinkle caraway seeds onto each biscuit.
Bake for 10-12 minutes until golden. Allow to cool for a few minutes on the tray before serving.
