Carrot Fritters

3 carrots, peeled and grated
1 chorizo sausage, finely sliced
½ cup rice flour
½ cup self raising flour
4 eggs
½ red onion, diced
300g prawns, deveined chopped
1 red chilli, sliced
1 green chilli, sliced
1 bunch spring onions, sliced
1 bunch coriander, chopped
2 cloves garlic, microplaned
1 knob ginger, peeled and microplaned
Salt & pepper

Oil for frying 

Dipping sauce
Hot chilli sauce


In a large bowl add carrots, eggs, onions, chilli, coriander, garlic, ginger, salt, pepper, chorizo and prawns, stir to combine. Gradually add flour, 1 tablespoon at a time, and stir through.
Heat frying oil to 160°C. Take a spoon full of batter and gently lower into oil. Fry fritters in batches for 2-3 minutes on each side or until they begin to turn golden brown. Drain fritters on a wire rack and season with a pinch of salt.
In a small bowl mix together mayonnaise and hot chilli sauce.
Serve carrot fritters with dipping sauce.
