Caribbean Prawns with Grilled/BBQ Pineapple


500g large green prawns, shells removed, keep tails on

1 tbsp. extra virgin olive oil

1 small onion, finely chopped
1 garlic clover, crushed

1 tsp. Allspice, ground
1 tsp. black pepper, ground
1/2 tsp. good quality salt
1/4 tsp. cayenne pepper

1 tbsp. honey
1 tbsp. molasses
2 tbsp. lime juice

1 tbsp. fresh thyme, finely chopped
1 lime, cut into wedges, for garnish

Pineapple Ingredients:

250g of fresh pineapple cut into thing rounds

1 tbsp. honey

2 tbsp. lime juice

1 tsp. good quality salt


Heat a large frying pan to a medium heat. Add a little olive oil, onion, garlic and sauté till brown. Add the prawns with the allspice, pepper, salt and cayenne pepper and sauté for 3-5 mins.

In a small bowl, whisk in oil, molasses, honey, thyme and lime juice until smooth and pour over the prawns, cook for a further 3-5 minutes on a low to medium health.

Mix all of the pineapple ingredients together and place on a lined baking tray. Cook under a medium heat grill or on a BBQ for 2-3 minutes each side or till golden brown on top.

Serve prawns on a platter with the pineapple and wedges of lime and coriander to garnish.
