Ingredients

250g Mozzarella cheese

250g vine ripened tomato

2-3 tbsp. fresh basil leaves, shredded

2 tbsp. extra virgin olive oil

1 tbsp. balsamic vinegar

Salt and pepper to taste
Method

Cut both the mozzarella cheese and the tomato into 1cm rounds.

On a serving tray arrange a slice of tomato topped with a slice of cheese and sprinkled with a little basil.

Mix the olive oil, balsamic and salt and pepper in a small bowl and pour over the salad.
