2 cups grates zucchini
1 small onion, finely chopped
310g canned cannellini beans, drained and rinsed
2 tbsp cottage cheese
2 tbsp of feta cheese
¼ cup of rice, spelt or wholemeal flour
2 eggs, lightly beaten
2 tsp Sea or vegetable salt (optional)
1 tsp of black pepper
Preheat oven to 180C.
Place zucchini, onion, cannellini beans, cottage cheese, feta cheese, salt, pepper and flour in a large bowl and mix well.
Combine eggs and stir into zucchini mixture.
Pour mixture into a greased and lined 10 x 22cm loaf tin.
Bake in a moderate oven, 180C, for 30 minutes or until golden.
Serve with a salad.
