Bulgur Pilaf

Serves 2
Time 25 minutes


3 tbsp extra virgin olive oil
½ red capsicum, finely diced
½ red onion, finely diced
3 cloves garlic, crushed
1 bay leaf
¼ bunch coriander, finely chopped
1 cup bulgur
2 ¼ cup chicken stock


Heat the pan, add oil. Sweat the onion and garlic, add the red pepper, coriander and bay leaf. Put the bulgur in and dry toss for 2 minutes. Season. Add stock, simmer for 18 – 20 minutes.
