Broccolini Pizza

Time 20 minutes


2 Lebanese bread or large pita

1 cup Homemade Broccolini & walnut pesto 

1 cloves garlic, sliced

2 bunches broccolini


1 bunch basil

Black olives, sliced 

baby bocconcini 



For the broccolini & walnut pesto

⅓ cup walnuts (soaked)

1 bunch broccolini, blanched

1 bunch basil

1 garlic clove 

½ lemon, juice

1 pinch chilli flakes

Salt & pepper

½ cup extra virgin olive oil 

½ cup grated Parmesan cheese


Preheat the oven to 170°C. 

Blanch both bunches of broccolini in a pot of boiling water for a few minutes, remove from the boiling water and plunge into a bowl of cold water. 

Take half of the broccolini (1 bunch worth) and roughly chop. Add the broccolini, walnuts, garlic, lemon juice, salt, chilli flakes, pepper, extra virgin olive oil and parmesan cheese to a food processor and blitz until combined. 

Spread a few spoonfuls of the pesto over the pita bread and spread out to form an even base. Top with sliced garlic, blanched broccolini, sliced olives,  parmesan and basil.
