Breakfast Wraps


2 tbsp olive oil  

1 cob fresh corn 

2 eggs

2 tbsp feta, crumbled

1 tbsp thyme, roughly chopped

2 pieces of mountain bread 



Remove corn kernels from cob. Heat your pan and add oil and corn and sauté until the corn softens. In a bowl whisk eggs then add feta. Then pour in the eggs and softly stir until cooked. Sprinkle over the thyme and stir through. Place half the mixture in each wrap and roll up.
