Breakfast Couscous

Serves 2
Time 25 minutes

Ingredients

1 cup wholemeal couscous

1¼ cup fresh apple juice

½ cup orange juice

4 tbsp honey

½ cup slithered almonds

¼ cup goji berries

½ cup blackberries

½ cup raspberries

4 peaches, deseeded, cut into quarters

2 tbsp pumpkin seeds 

½ cup Greek-style yoghurt

Method

Heat apple and orange juice and 2 tbsp of honey in a saucepan and bring to a boil. 

Place couscous into a bowl and pour juice over the top. Cover with cling wrap and set aside for 5-8 minutes.

Remove cling wrap and use a fork to fluff the couscous. 

Once couscous is cooled, add almonds, goji berries, peaches, berries, pumpkin seeds and mix.

Serve into 2 bowls and a good amount of yoghurt and a little drizzle of honey to finish.
