Breakfast Carbonara

Serves 4
Time 20 minutes


1 pkt fresh pappardelle 375g

100g bacon, diced

30g butter

6 eggs

olive oil

50g parmesan Cheese

100g baby spinach

salt and pepper to taste


Cook pasta as per the packet directions, for 3-4 minutes. Add butter to a pan and fry two to three eggs at a time.

In another pan, fry bacon, add olive oil to crisp it up. Add spinach to pan. Add some al dente cooked paste into the pan and mix the bacon and spinach.

Place the pasta on to a plate, cover it with the fried eggs and top with parmesan cheese. Season to taste.
