Breakfast Bagel with the Lot

Serves 6-8
Time 30 minutes


6 eggs
6 tomatoes, large
Large knob butter

1 avocado
Squeeze lime
¼ b coriander
1 Chilli, chopped
1 tbsp tabasco

1 packet bagels
6 thick rashers bacon
¼ iceberg lettuce, shredded
½ red onion, sliced

Adrian’s Special sauce
2 tablespoon American Mustard
2 Tablespoon Tomato Sauce
2 tablespoon BBQ sauce
1 teaspoon Tabasco
1 cup of mayonnaise (Kewpie)


Fry the bacon on both sides with a little olive oil in a hot pan. Add the sliced onions with some butter. Season with pepper.

Make the special sauce by combining all of the sauce ingredients well.

Combine the avocado, lime juice, coriander, chilli and tabasco to make the salsa.

Fry the eggs with butter in a hot pan.

Lightly toast the bagel, then assemble with lettuce, tomato, bacon, onion, salsa, fried egg, avocado salsa and special sauce.

Eat carefully.
