Bread & Butter pudding


1 loaf raisin bread, sliced and buttered

1 loaf white bread buttered

2 tbsp butter

½ cup raisins

1 tsp cinnamon

½ cup brown sugar

6 whole eggs, lightly beaten

600 ml cream

300 ml milk

1 tsp vanilla essence




In a large baking dish, butter the inside, then sprinkles the buttered edges with 2 tbsp sugar. Lay out bread in alternate slices around until all the bread is in the dish, and sprinkling the raisins evenly throughout.

Mix the sugar with the cream eggs and milk and cinnamon.

Pour over the bread, this may need to be done is smaller batches to allow the mixture to soak in. Allow soaking for an hour. Bake in an oven at 175c for 30 – 40 min until the pudding has set and the top is golden brown and crunchy.

Serve with fresh cream.
