Brazilian Hot Beef

Serves 4-6
Time 30 minutes


750g lean beef

¼ cup light coconut milk

2 tbsp. tomato paste

3 garlic cloves, finely crushed

1 tbsp. ground ginger

2 tbsp. curry powder

1 -2 red capsicums, cut into strips

1 spanish onion, thinly sliced

1 tbsp. extra virgin coconut oil

salt and pepper, to taste

parsley, to serve


In a bowl mix together coconut milk, tomato paste, garlic, ginger, curry powder, salt and pepper and whisk together. Add the beef and leave to marinate for 10-20 minutes.

In a frying pan add the onion, capsicum, coconut oil and season, sauté for 5-10 minutes. Once cooked removed into a bowl and keep warm.

In a grilled pan or BBQ cook the beef for 3-5 minutes each side.

Serve the beef on a bed of the onion and capsicum mixture and sprinkle with parsley on top.
