Blush tomato kataifi pie



3 white onions, finely sliced

4 garlic cloves, finely sliced

2 rashes of bacon, cut into thin slices

2 chicken breast, diced

2 cups cheddar cheese, grated

2 tbsp basil, roughly chopped

1 bunch parsley, roughly chopped

5 tomatoes, sliced

2 tbsp. olive oil

½ packet kataifi pastry

butter, melted



Preheat the oven to 180 degrees. 

Heat oil in a frying pan, add onions and garlic. Cook for 3 – 4 minutes or until onions soften slightly.


Transfer half of the onion mixture to the bottom of an oven safe baking dish. Top with half the chicken pieces and sprinkle with herbs. Add half the bacon and cheese and then cover with slices of tomato.


Add remaining chicken, herbs, onion and cheese.


Gently pull apart kataifi pastry and arrange on top to completely cover the filling. Brush with melted butter.


Transfer dish to the oven and cook for 30 – 45 minutes or until golden brown.
