Blueberry Coulis

Serves 550 ml
Time 10 minutes

Ingredients

3 punnets blueberries
ΒΌ cup castor sugar
2 tbsp cold water

Method

Add the ingredients into a pan and bring to the boil, then let it simmer for 8-10 minutes, stirring occasionally.

Once the blueberries have softened remove the pan from the heat and blend with a hand blender.
Allow to cool and serve with ice-cream or any dessert.
