Blue Cheese Lettuce Wedge Salad

Serves 4
Time 15 minutes


1 head iceberg lettuce
¼ red onion, finely diced
2 tomatoes, seeded and diced
½ cup seedless grapes, halved
100g creamy blue cheese
½ cup Greek yoghurt
Juice of 1 lemon
1 tsp Dijon mustard
2 tbsp chives, finely chopped
Salt and pepper
Honey, to serve (optional)


Chill a large serving plate for at least 30 minutes prior to serving.

Add the blue cheese, yoghurt, lemon juice, mustard and chives to a bowl and whisk together. Season with salt and pepper.

Cut lettuce into four wedges and place on chilled serving plate.

Drizzle with blue cheese dressing and scatter grapes, tomato and red onion on top. Drizzle over a little honey, if desired.
