Black Rice Dessert


1 cup black rice

¼ knob of butter

2 pandan leaves, tied in knots

1 ¾ cups coconut water

2 star anise

1 cinnamon quill

4 – 5 cardamom pods

1 kaffir lime leaf

1 tbsp. butter

1 tbsp. brown sugar

1 tbsp. brown sugar

100ml AYAM coconut cream

ice cream, to serve


In a medium pot, heat butter and add cinnamon quill, star anise, cardamom pods, kaffir lime leaf and black rice. Add coconut water, pandan leaves, brown sugar and put lid on for 20 minutes on low heat.

Allow to stand for 5 minutes and stir in a little coconut cream. Serve with ice cream and more coconut cream drizzled over top.
