4 veggie sausages, butterflied or halved long ways
½ cup cherry tomatoes, halved
1 cup button mushrooms, thinly sliced
1 tbsp fresh thyme, chopped
1 tbsp fresh oregano, chopped
4 large eggs
Salt and black pepper, to taste
1 tbsp extra virgin olive oil
Heat oil in a medium lidded frying pan on a medium heat.
Sauté sausages, cherry tomatoes, mushroom and half the herbs for 3-4 minutes.
Now reduce heat to low and crack eggs one at a time into empty spots in the pan, make one circular motion with the pan to make sure eggs cover all ingredients in the pan.
Pop on the lid and cook for 3-5 more minutes.
Sprinkle with remaining herbs and season with salt and pepper.
