Berry & Tofu Mousse


300g firm tofu

1 vanilla bean pod, cut in half and scrape the seeds out

2 tbsp honey or maple syrup

1.5 cups mixed frozen berries

1/2 punnet of fresh blueberries

1/2 punnet of fresh strawberries, cut into quarters

1 cup natural soy yoghurt

6 frozen glasses, to serve


In a food processor or blender add the tofu, vanilla seeds, honey, berries, mix till smooth. Once the mixture is smooth, add the soy yoghurt.

Divide the mixture into frozen glasses and serve.
