Ingredients
1 whole chicken
Marinade
1 knob ginger, grated
3 cloves garlic, grated
1/2 red onion, finely diced
1 long red chilli, finely chopped
juice of 2 limes
1 tbsp fish sauce
1 tbsp mirin
2 tbsp light soy sauce
bunch coriander, roughly chopped
salt and pepper
1 lemon
Salad
mango
spring onions
coriander
red capsicum
chives
salt
olive oil
lemon juice
Method
Spatchcock the chicken (or ask your butcher to do it for you). Mix together the marinade ingredients in a bowl. Place the chicken in a deep tray and season with salt and pepper. Pour over the marinade and rub into the chicken.
Cook the chicken on the BBQ over a medium heat, turning the chicken regularly so the skin caramelises and the juices remain in the chicken.
