Banana Sushi Rolls

Serves 4
Time 35 minutes


1 cup white sushi rice
1 cup black rice
½ cup coconut milk
1 tsp vanilla extract
1 tsp natvia or sugar
1 mango, thinly sliced
2 kiwis, thinly sliced
½ cup raspberries
1 banana, sliced into chunks
1 tbsp peanut butter
2 tbsp dark chocolate, melted
½ cup desiccated coconut
2 tbsp black sesame seeds
¼ cup puffed rice
2 tbsp sprinkles


Cook the sushi rice and black rice, separately, according to packet directions, then five minutes before it has finished cooking, stir through the coconut milk, vanilla and natvia or sugar in each. Let cool slightly until you can handle it, then with wet hands, mould into small balls.

Top the rice balls with the mango, kiwi and raspberries, alternating for each one, so it resembles nigiri.

Spread the pieces of banana with peanut butter around the edges, then roll in the coconut. Alternate with sesame seeds, puffed rice and sprinkles, using melted chocolate instead of peanut butter if desired.
