2 cups wholemeal self-raising flour
½ tsp. bicarbonate soda
½ cup maple syrup
1 large ripe banana, mashed
1 cup strawberries, cut into quarters
½ cup sultanas (soak in hot water, discard the water)
2 eggs, lightly beaten
1 cup soy milk
⅓ cup extra virgin coconut oil, melted
Selection of nuts, seed, and fresh and dried fruit, and natural yoghurt (mixed with cinnamon and honey) to make the funny faces.
Preheat the oven to 180C. In a large bowl mix the flour, and bicarbonate soda. Add all the remaining ingredients, mix well and pour into greased muffin tins. Cook for 25-30 minutes.
Once cooked leave to cool, and then spread with yoghurt and decorate with funny faces made out of the different fruits, nuts and seeds.
